Anthony Sarpong

Anthony Sarpong, star chef, author, and passionate host, has faced many challenges throughout his life.

Born in Kumasi / Ghana, he grew up in Wiesbaden and always knew what he wanted. He began his career as a professional footballer, but fate had other plans. A sports injury ended this dream, and he quickly dreamed a new one so as not to lose any time.

Thus, he followed his second great passion, became a chef, and traveled the world in search of culinary secrets. He wanted more than the familiar, creating his own cooking style, which is now known as holistic NEW DINING. Creativity, vision, Prussian organizational talent, and a highly dedicated team earned Anthony’s Kitchen its first Michelin star in 2018 in Meerbusch near Düsseldorf, confirming its consistent top quality.

Why did you become a chef?

It was actually planned quite differently, but my great passion for cooking and the resulting enjoyment was passed down to me directly from my family's kitchen.

The path was very short and proved to be the right one.

What's the best thing about your profession?

The high level of creativity and the fact that people entrust you with their health and ultimately their lives is a weighty fact that demands respect.

What does respect for food mean to you?

As the name suggests, they are means for life. This attribute alone includes using them purposefully and managing them efficiently, which should actually be a basic skill during chef training.

This also reflects the awareness that we exclusively use resources that have experienced deep and species-specific honorability in their creation process. This applies to all species, whether on land, water, or air, because these elements are fundamental to our own existence.

This also includes the tools that, when refining food by cutting, do not diminish its dignity, but visibly elevate it to palate level.

How important is sustainability in fine dining?

Every kitchen should honor these aspects, not just fine dining!

There can be no favorite among NESMUK knives, because each knife stands on its own and the collection merely offers different knives for individual uses.

You have to have them all, and you'll find that you use them all, but for very different tasks..

What distinguishes Nesmuk knives from other knives you've worked with before?

Why are good tools (like Nesmuk knives) so important in your profession?

Nesmuk also reflects our expectations of ourselves.

We take care of ourselves, are in a good mood, and show mutual respect within the team, as well as to the food we process and ultimately to our guests.

This has been clearly perceived for years and has become our calling card that builds trust.

What personal connection do you have to your cutting tools?

Since NESMUK, the term cutting tool is actually very inappropriate, even if it describes the type.

Is it a knife or a NESMUK, that is the question for us.

Cutting tools are also used by the fire department. Fortunately, you are far from that with NESMUK and perhaps need a new language of form to grasp what is created in the manufactory.

It may also be because a certain aura, like a soul, is breathed into the NESMUK treasures during their creation process, extending the chef's arm and becoming a part of him.

Therefore, a chef does not acquire a knife, but falls in love with the soul of the NESMUK.

What fascinates you about really good (Damascus) knives?

Damascus knives require a lot of care, like a life partner.

Then they bring joy and the certainty of always being there when you need them. When I contemplate the high craftsmanship traditionally involved in the creation of Damascus to produce these unique pieces, I always get goosebumps.

What inspires you ?

My family, the people around me, and the changing seasons, which gift me with scents, aromas, and new insights.

Where do you get your inspiration?

Ultimately, it is nature and its inexhaustible diversity that needs to be united in enjoyment.

If this is perceived by the guest, it may be the secret of life that we uncover anew every day.

That gives me the energy to experience all this with my team in deep gratitude.
