After years of professional experience in Germany, the Netherlands, Italy, and Thailand, Thomas and Mathias settled in a charming 1970s villa in the heart of Bangkok. Without changing the soul of the house, they renovated it and opened the restaurant they had always dreamed of: a place to foster their creativity, which they could call home and invite their guests and friends to discover their new vision of German gastronomy.

Why did you become a chef?
"Out of conviction, and because the profession offers so many opportunities and prospects."
What is the best thing about your profession?
"The conscientious handling of our planet's resources."
How important is sustainability in fine dining?
"Very important, as fine dining reflects the highest form of our profession, thus paving the way for innovation."
What does respect for food mean to you?
"Not treating it with indifference, but with the utmost concentration and appreciation."

Why are good tools so important in your profession?
"It makes the work incredibly easier, especially in our field where precision is crucial.
The starting point of our dishes is always the search for the best basic product. After that, the best tools to give this basic product the so-called "final touch"."
How do you incorporate sustainability into your kitchen?
"We are in constant contact with our farmers and suppliers. Especially here in Thailand, we have experienced a boom in recent years. In the field of agriculture, the country offers excellent conditions. Many special products for fine dining are cultivated here. Furthermore, we filter and purify our water in-house, which is then offered as drinking water in the restaurant. In addition, we have reviewed our restaurant's energy concept and made investments to significantly reduce energy consumption. These are just a few examples of how we ensure greater sustainability within our four walls."
