The fantastic kitchen team at Daalder is led by Patron-Chef Dennis Huwaë. He challenges his team to always raise the bar higher - as if cooking were an elite sport. One could say that not much has changed for Huwaë in this regard since his 2-star period.
For him, creating a perfect dish is still a quest for the ideal combination of ingredients that enhance and complement each other perfectly. His desire to create the perfect new dish is so great that, as he himself says, he seeks the "inner beauty" in every ingredient and wants to get the best out of it.
