Anthony Sarpong, Michelin-starred chef, author and passionate host, has faced many challenges throughout his life.

Born in Kumasi / Ghana, he grew up in Wiesbaden and always knew what he wanted. He initially started his career as a professional footballer, but fate had other plans. A sports injury ended that dream, and he quickly dreamed a new one to avoid losing time.

So he followed his second great passion, became a chef, and traveled the world in search of culinary secrets. He wanted more than the familiar, creating his own style of cuisine, now known as holistic NEW DINING.

Why did you become a chef?

It was actually planned quite differently, but the great passion for cooking and the resulting enjoyment was instilled in me directly from my family's kitchen. The path was very short and proved to be the right one.

What is the best part about your job?

The high creativity and the fact that people entrust you with their health and ultimately their lives is a serious matter that demands respect.

How important is sustainability in fine dining?

Every kitchen should appreciate these aspects, not just fine dining!

What does respect for food mean to you?

As the name suggests, they are means of life. This attribute alone implies using them purposefully and economically, which should actually be a basic principle already in chef training.

This also reflects the awareness that we only use resources that have been treated with deep and species-appropriate respect during their creation process. This applies to all species, whether on land, water, or air, because these elements are fundamental to our own existence.

This also includes the tools that, when refining food by cutting it, do not diminish its dignity, but rather noticeably elevate it to palate level.

Which Nesmuk knife is your favorite and why?

There can be no favorite at NESMUK because each knife stands alone and the collection merely offers different knives for individual uses.

You have to have them all, and you'll find that you use them all, just for very different tasks.

Why is good craftsmanship so important in your profession?

Nesmuk also reflects our expectations of ourselves.

We take care of ourselves, are in good spirits and show mutual respect in the team, as well as to the food we process and ultimately to our guests.

This has been clearly perceived for years and has become our calling card that builds trust.

What inspires you?

My family, the people around me, and the changing seasons, which bless me with scents, flavors, and new insights.
